La Pavoni and Dancing Goat Coffee

A new range of traditional coffee machines......

We are delighted to share the news of our new range of coffee machines from distinguished manufacturer La Pavoni.

Founded in Milan, Italy in 1905 by Desiderio Pavoni, his first machines were just huge boilers with lots of steam production, lots of valves and outputs, but they produced coffee on demand, in small cups made ‘expressly’ for each customer. This machine was called the Ideale.

One problem with this machine was that steam touched the coffee grounds, producing off flavours. Another problem was that the pressure wasn’t high enough, and attempts to increase the pressure to produce more extraction only ended up damaging the coffee more with the increased steam contact. As electricity replaced gas and Art Deco replaced the chrome-and-brass aesthetic of the early 20th century, the machines became smaller and more efficient, but no coffee innovators managed to create a machine that could brew with more than 1.5-2 bars of pressure without burning the coffee.

Thankfully these problems were overcome and we are thrilled to be working in partnership with a company with such esteemed coffee history.  We offer La Pavoni machines not only with the lever pull system but also in automatic versions and with options for gas, this duel fuel range really is versatile and has something to suit every need.
